Lite Mississippi Mud Bars
6 tbs. low fat margarine melted
1 ¾ cups sugar
1 cup unsweetened applesauce
¼ cup unsweetened cocoa
½ tsp salt
8 oz Egg Beaters
2 tsp vanilla extract
1 ¾ cups plain flour
½ tsp baking powder
½ cup flaked coconut
3 cups mini marshmallows
non- fat cooking spray

Make topping with 8 items below:
2 tbs. Low- fat margarine
1 oz unsweetened chocolate
1/3 cups unsweetened cocoa
1/3 cup evaporated skim milk
1 cup powdered sugar
1 tsp vanilla extract
¼ cup pecans
¼ cup coconut

Preheat oven to 350 degrees. Spray 9x13 pan with cooking spray and sprinkle with flour. Melt 6 T. margarine in a saucepan over low heat. Mix 1 c sugar, salt, and c cocoa together. With a wire whisk stir sugar mixture and applesauce into margarine. Remove from heat and add Egg Beaters and vanilla extract. Mix flour and baking powder together and stir into mixture. Add coconut and pour into prepared pan. Bake for 25 minutes and remove from oven. Spread marshmallows on top and return to oven. Cook until marshmallows are melted and lightly browned. Remove from oven and allow to completely cool.
Topping: Combine 2 T. Margarine and 1 oz chocolate in a saucepan. Melt over low heat. Mix together cocoa and powdered sugar. With a wire whisk, stir in cocoa mixture, 1/3 c milk, vanilla, coconut and pecans. Spread evenly over cooled cake.
